I love love loooovveee this pancake recipe. It's just so dang good with the fluffy pancakes, the sweet and crunchy apples and the warm and comforting cinnamon. There are no words. It's seriously scrumptious.
Ingredients
-1/2 fuji apple
-1/2 teaspoon of butter
-1/4 teaspoon of cinnamon, plus a dash for the apples
-1/3 cup of whole wheat flour
-1/2 teaspoon of baking powder
-Dash of salt
-1 teaspoon of sugar
-1 large egg
-3 tablespoons of almond milk
Directions
-In a bowl, mix all your dry ingredients together (cinnamon, flour, baking powder, salt and sugar).
-In a separate bowl, mix the wet ingredients (egg and almond milk).
-Add the dry to the wet. Let the mixture sit while you cook your apple slices.
-Slice your apple very thinly.
-Once cooked, add your butter and cinnamon. Stir until all the slices are coated in the butter-cinnamon mixture.
-Transfer the apples to a plate, re-spray your skillet, bring to medium-high heat and add the whole pancake batter. I like having one big pancake but you can divide the batter into 2 pancakes. Let it cook for about 3 minutes. You should see bubbles forming on top, that's a clue that the pancake can be flipped. Then, cook for about 2 minutes on the other side. Place the pancake on a plate, then the apple slices on top and you're done! I add a tiny drizzle of real maple syrup and it's just perfect. You don't need a lot of syrup because the sweetness from the apples and the pancake itself is enough.
Serving size: 1 pancake with half a fuji apple (not counting maple syrup)
