Back to Basics 5 - American Chop Suey


Quick, easy and DELICIOUS! This recipe is adapted from another blogspot: cheaphealthygood.




Kinda looks like a heart, doesn't it?
Ingredients
-1 tablespoon olive oil, divided
-1 1/2 lbs ground turkey
-1/2 lb (about 2 cups) uncooked whole wheat elbow macaroni
-1 whole onion, minced
-1 green bell pepper chopped
-2 8oz cans tomato sauce
-1 cup water
-salt and pepper to taste
-1 1/2 tablespoons Worcestershire sauce


Directions


-In a large nonstick skillet, heat 1/2 tablespoon olive oil over medium-high heat. Add half of the onion, a pinch of salt and saute until golden and softened. Add turkey, add a pinch more salt and pepper. Cook until browned, breaking it up with the back of a spoon as you go. Remove turkey and place on plate or in bowl for time being.


-Wipe the pan with a paper towel to get some of the grease out. Add remaining 1/2 tablespoon olive oil and heat over medium-high heat. Add macaroni, rest of onion and pepper. Add another pinch of salt and pepper. Cook for 5 or 6 minutes, until onion is soft and a little translucent, stirring occasionally. Add meat back into pan. Stir.



-Add tomato sauce, water and Worcestershire sauce. Stir everything and cover pan. Drop heat to medium-low and simmer about 20 or 25 minutes.
