Strawberry Sauce


I got this recipe from Ellie Krieger, she's a nutritionist and cook. I found out about her from watching Food Network and Cooking Channel, she has some amazing recipes. This is definitely one of them. This strawberry sauce is so versatile and delicious. My favorite way to eat it is with some fluffy buttermilk pancakes. You can use fresh or frozen and thawed strawberries so this can be used all year-round. It's also very fast!
Ingredients 
-2 pints of fresh strawberries, hulled. You can also use 4 cups of frozen, unsweetened strawberries that have been thawed.
-1 teaspoon of lemon juice. Please DO NOT use juice you get from that fake plastic lemon in the produce section. Why would anybody use that?? It's RIGHT next to the real lemons. Don't even get me started on this topic.
-2 tablespoons of pure maple syrup

Directions
-Put your strawberries in a food processor and process them until they become a chunky puree.


-Transfer them to a small saucepan and heat on low until warm. Then add lemon and maple syrup.


-You can put them under your pancakes or add right on top as you would maple syrup.


Serving Size: One serving is 1/3 cup. Makes 1 and 1/3 cups, serves 4 people.
Nutritional Info: 63 calories per serving, 0 fat, 0.7g protein, 15.5g carbs, 2.2g fiber, 0 cholesterol, 2mg sodium.
