Fettuccine Alfredo with Brussels Sprouts & Mushrooms



Fettucine alfredo is one of the most popular Italian dishes in America. It's such good comfort food, you feel like you're in heaven while you're eating it. Once you're done though, that feeling turns to shame and regret, or is that just me...? It's so good but it's also so evil! It has an insane amount of calories.
If you are looking for something to hit the same notes as Alfredo sauce does but without all the calories, this dish is for you. It's not a traditional Alfredo because it doesn't use butter or cream but it's just as good! Let me show you how to make it.




Ingredients
-12oz whole wheat fettuccine
-1 tablespoon extra-virgin olive oil
-4 cups of sliced mushrooms, it can be whatever kind you like. I usually mix them up.
-4 cups of thinly sliced Brussels sprouts (learn why they're the new superfood!)
-1 tablespoon of minced garlic
-1/2 cup of dry sherry (the one you get at a liquor store, not a "cooking sherry" from the grocery store), or 2 tablespoons of sherry vinegar.


-2 cups of low-fat milk
-2 tablespoon of all-purpose flour
-1/2 teaspoon of salt
-1/2 teaspoon of freshly ground pepper
-1 cup finely shredded or grated Asiago cheese

Directions
-Put a large pot on to boil with salted water. Once it has come up to a boil, add your pasta and cook for about 8-10 minutes. Drain and return to the pot.
-Meanwhile, heat oil in a large skillet over medium heat. Add mushrooms and Brussels sprouts and cook, stirring often, for 8-10 minutes. You want the mushrooms to have released all their liquid.


-Add garlic and cook for about a minute, until you can smell it.


-Add sherry or vinegar, scraping up any brown bits. Bring to a boil and cook until almost evaporated, about 1 minute for sherry and 10 seconds for vinegar.


-Whisk milk and flour in a separate bowl.




-Add to the skillet with salt and pepper.


-Cook, stirring, until sauce bubbles up and thickens, about 2 minutes.


-Stir in the cheese until melted. Add the sauce to the pasta and toss.



-You can serve as is or add more cheese on top.


It's a beautiful thing... This pasta taste so so good and you don't realize that you aren't having meat!
