An easy recipe for my first post using leftover pork and brown rice from last night's dinner. I just added a simple salad of baby spinach, fresh mozzarella and tomatoes, seasoned with kosher salt, dried oregano and a little bit of olive oil. I'll be honest, I did not track the calories on this one because today's been a little hectic.
HEAR YE, HEAR YE!! Next week I'll be starting a new series. We'll go through all the basics of healthy cooking and eating: types of foods, how to cook and get the most flavor out of your ingredients, how to follow a recipe correctly, kitchen tools, etc! Should be extra tons of loads of fun!!!
