Margherita Breakfast Sandwich


This recipe came about because I woke up one morning and was just not in the mood to make anything elaborate but I was craving just that. I wanted a nice little breakfast sandwich but I didn't want to leave the house, I just didn't want to do a whole lot of work. This is easy and quick, as all breakfasts should be.


Ingredients
-Whole wheat light toast, mine has 35 calories
-4 thin slices of fresh mozzarella
-2 slices of tomato
-1 egg fried in a pan with a little olive oil spray.
-Salt and pepper to taste, garlic powder, oregano, basil leaves.

Directions
-Throw your bread in a toaster.
-While your toast is toastin', heat your frying pan over medium-high heat with only a couple of quick olive oil sprays. When hot, crack your egg in there.
-Once your toast comes out, quickly put the mozzarella on top so it will get all melty, then put your tomatoes on top. If you have basil, put the leaves in there now. Once your egg is done to your liking, put it right on top.
-You can season it with salt and pepper to taste, I like to put in garlic powder and oregano.



1 serving: entire open-faced sandwich
